SPINACH AND CHEESE ENCHILADAS

Components:

For the Enchilada Filling:

  • 2 cups recent spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to style

For the Enchilada Sauce:

  • 2 cups tomato sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to style

For Assembling:

  • 8-10 small corn tortillas
  • 1 cup shredded cheddar cheese
  • Chopped recent cilantro for garnish (non-compulsory)

Directions:

1. Put together the Enchilada Filling:

  • In a mixing bowl, mix the chopped spinach, ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, garlic powder, salt, and pepper. Combine till effectively mixed. Put aside.
