2 tablespoons olive oil
3 boneless, skinless chicken breasts
1 teaspoon of salt
½ teaspoon of pepper
1 cup uncooked basmati rice OR long grain rice
2 ½ cups chicken broth
1 bag (12 oz) frozen steamed broccoli
2 cups grated cheddar cheese
In a large skillet (make sure it has a lid) over medium-high heat, add the olive oil, chicken, salt and pepper.
Cook, stirring frequently, 4 to 6 minutes, until the chicken is almost not pink in the middle. The chicken should be white on the outside.
Drain excess liquid and oil from chicken.
Add rice and chicken broth. Bring to a boil. Once boiling, cover with a lid and reduce the heat to medium-low.
Simmer 15 minutes or until water is absorbed and rice is cooked.
While the rice and chicken simmer, cook the microwaveable broccoli in the microwave according to package directions.
Once done, cut the broccoli into small pieces, if desired.
When the rice is done, add the broccoli and 1 cup cheese to the skillet. Mix.
Garnish with the remaining cup of grated cheese and cover with the lid. Cook for about 2 minutes more or until the cheese is melted.
