Pot Pie Filling

1 1/2 cups chopped yellow onion (1 medium)
4 Tbsp unsalted butter
1/4 cup all-purpose flour
2 1/3 cups low-sodium rooster broth*
1 cup half and half
3/4 tsp dried thyme, or 2 tsp minced recent
3/4 tsp dried rosemary, or 2 tsp minced recent
Salt and freshly floor black pepper
12 oz. frozen combined greens
3 cups cooked shredded rotisserie rooster (breast and thigh meat)
1 1/2 cups (7.5 oz) unbleached all-purpose flour (scoop and stage to measure)
2 tsp baking powder (ideally aluminum free)
1/4 tsp baking soda
1/2 tsp salt
6 Tbsp unsalted butter, minimize into 6 items
3/4 cup + 1 Tbsp buttermilk, effectively chilled
1 Tbsp minced recent parsley
